  • Quartered Mushrooms 1 cup
  • Chopped beans 1/2 cup
  • Chopped carrots 1/2 cup
  • Medium onion 1
  • Garlic cloves 5-6
  • Ginger 1 inch knob
  • red chillies(soaked in hot water) 2
  • Chilly powder 1 tbsp
  • Turmeric powder 1 Tbsp
  • Coriander powder 1 Tbsp
  • Cumin seeds 1 Tbsp
  • Coconut milk 2 Cups
  • Salt As Required
  • Oil As required
  • Sugar 1 Tbsp
  • Fried garlic chips
  • Fried onion
  • Roasted, Crushed peanuts
  • Chopped spring onions
  • Chilli flakes

Instructions

  • To begin with this recipe, we will firstly make a paste of the onion, garlic, ginger, rehydrated red chilli, turmeric powder, coriander powder, chilli powder.
  • After grinding this into a smooth paste, we will heat a pan and add 2 tbsp oil.
  • 3. To the heated pan, we will add 1tbsp cumin seeds and let it turn fragrant for 30 seconds.
  • Now, we will add the mushrooms, beans and carrots. Now, you can use any vegetables here. Broccoli or paneer will go really well. Cook this to your desired point. You can keep it crunch if you prefer. Cook it for a lesser time to achieve that.
  • Now we will add, the (khao suey) paste we grinded and cook it till the raw smell is eliminated. It will start getting thicker.
  • Add 2 cups of coconut milk now and bring it to a boil. Boil it only once and not more. Stir well and that’s it for the Khao Suey broth.
  • 7. Plate by adding noodles to your bowl and then adding the broth. Finish up by garnishing with the accompaniments mentioned. The accompaniments are key ingredients for this dish and definitely do not miss out on that.

Noodle soups have always been a go-to dish for me, for three main reasons - 1.The sheer convience of having an entire meal from a single bowl. 2.The incredible fusion/combination/amalgam of flavours adding to the uniqueness of every single dish. 3.Do I really have to talk about how wholesome these dishes are? Accompaniments: fried garlic chips, fried onions, roasted and crushed peanuts, chopped spring onions, chilli flakes.
