Ingredients

  • Carrots, peeled and diced 4 units
  • Onion, chopped 1 units
  • Celery, chopped 1 units
  • Apples 2 units
  • Ginger 1 units
  • Nutmeg 1/2 teaspoons
  • Vegetable stock 6 cup
  • Coconut milk 1 cup
  • Salt as per taste
  • Pepper as per taste

Instructions

  • In a large pot, cook onions in a little olive oil until translucent and fragrant. Add carrots, apples, ginger, and celery and mix with the onion.
  • Add stock and let it gently simmer until vegetables are softened.
  • Add coconut milk n blend well.Season with nutmeg, salt and pepper to taste.chill n serve.
