- Take 200gm. cottage cheese in a plate (after removing the moisture)
- Add 2 tbsp. all-purpose flour (Maida) in it
- Mix and Knead it well
- Add 1 tbsp. semolina
- Knead well by rubbing with your palm, so that the flour and semolina will mix with chhena properly.
- Add crushed green cardamom seeds in the kneaded dough for adding aromatic flavor
- Mix it well and flatten the kneaded cheese in a flatbed plate
- Cut it into equal sizes and keep aside
- In pan add 150 gm sugar and 100 ml water and make it boil and prepare sugar syrup till 1 string. ( it will take around 5 minutes in medium flame)
- Add the chhena pieces in boiled sugar syrup
- make it boil in low flame for 5 to 7 minutes so that the syrup will be absorbed in the cheese pieces.
- Chhena Kata is cooked properly. Now switch off the flame.
- Remove it to a plate by keeping it separate in plate otherwise it will stick with each other.
- Chhena Kata is ready to serve. I have added few crushed cardamom to garnish
