Chicken Mole with Mashed potatoes & Smoked Veggies

Ingredients

  • Boneless chicken thighs 2 pcs
  • Chocolate 60 gms
  • Spicy red chillies 12-15
  • Cumin powder 2 tsps
  • Tomatoes 2 small
  • Red onion 1 medium
  • Garlic 2 pods
  • Adobo sauce 2 tbsps
  • Potatoes 4-5 big
  • Cream 50 ml
  • Butter 20 gms
  • French Beans 4-5
  • Mushrooms 100 gms
  • Cauliflower 2-3 florets
  • Broccoli 4-5 florets
  • Carrot 1
  • Baby corn 3-4 pcs
  • Dried herbs 1 tsp
  • Salt & pepper To taste
  • Coal 1 big pc

Instructions

  • For the marinade : Blanch the tomatoes & peel them.
  • Grind It With The Onion, 1 Peeled Pod Garlic, Cumin Powder, Chocolate, Adobo Sauce, chillies (water if required) till a smooth paste.
  • For the chicken : Heavily salt the chicken. Make incisions & rub and coat with the marinade.
  • Set Aside To MariNate for 1 hour minimum.
  • For the mash: Boil the potatoes until really soft & peel.
  • Once cooled pass the potatoes through a sieve (for a very smooth non lumpy consistency)
  • Add the cream little by little to the potatoes and put it on a low flame. Ensure that the potatoes do not get lose & flowy.
  • Add the butter & salt Pepper. Take off the flame & set aside
  • For the veggies : Cut the veggies into 1 inch pieces.
  • In a pan, heat some oil add the peeled minced/chopped garlic. Add the veggies.
  • Add salt pepper & herbs. Cook until the veggies still have a bite to them.
  • For the smoke : Burn coal on the gas burner till red blistering hot. Put it in a steel katori & add butter/oil on it. Once it starts smoking place the katori in the vessel with the veggies & cover it ensuring no smoke escapes.
  • Grill the chicken untill it's cooked. Reduce the marinade to a sauce.
  • Plate it with the grilled chicken with the sauce a dollop of the mash & the smoked veggies.

Notes/Tips

* do not fry the marinade too much or add water/stalk when necessary as chocolate burns easy. * The more the chicken rests in the marinade the better. * Let the chicken rest before serving. * Enjoy with a chilled beer (you shall need it for the spice)
