Ingredients

  • Chickpeas 15 oz
  • Pumpkin Puree 1 cup
  • Lentils 1 Cup
  • Coconut milk 15 oz
  • Cayenne pepper 1/4 tsp
  • Curry Powder 1 tbsp
  • Vegetable broth 2 cups
  • Garlic 2 cloves
  • Onion 1
  • Kosher salt 1 tsp

Instructions

  • Add all ingredients except coconut milk into the slow cooker and stir well. Cover and cook on low for 8 hours. Add coconut milk and stir well. Cook for another 30 minutes. Serve with rice and enjoy.
