Diwali is occasion of love and happiness. And this festival is incomplete without sweets... So i prepared a fusion Dish for this diwali.

Coconut and Rabdi Sweet Cups

Ingredients

  • Coconut paste 1.5 cup
  • Sugar 2.5 cup
  • Full cream Milk 500 mililitres
  • Grated Paneer 1/2 cup
  • Maida 1 cup
  • Ghee 2 tablespoons
  • Salt 1 pinch
  • White oil 500 mililitres
  • Water 1.5 cup
  • Chopped cashews, kismis and almonds for garnishing
  • Edible Rose petals for garnishing
  • Crushed cardamom 3 pinch

Instructions

  • Heat a pan and add 1 teaspoon ghee, add in the coconut paste and sugar. Cook it until it combined well. Add 1pinch of crushed Cardamom to it just Before turning off the heat.
  • In another pan add milk and bring it to Boil to make rabdi. Stir in regular interval. Along with take a sauce pand add 1 cup sugar and 1cup water. Make sugar syrup of 1 string. At the mean Time when milk reduces add 1/2 cup of sugar and mix.
  • Next add the grated paneer to the milk. Cook for 10 min. Lastly add 1 pinch of crushed Cardamom. Turn off the heat and let it be cool.
  • To make the cups take maida,1 pinch of salt,1 pinch of sugar and ghee in a mixing bowl. Mix very well. Add water and make a hard dough. Rest it for 30 minutes.
  • Now make small balls from the dough. Press it with the back of a flat Bowl. Shape them like small cups. Heat the oil and fry the Cups,in medium heat. until it turns to golden colour.
  • Now dip the cups into sugar Syrup for 20 minutes.
  • Take the chopped almonds and cashews in a plate. Coat the edges of the cups with dry Fruits. And finally fill the cups with 1st layer of sweet Coconut and Next with rabdi. Garnish with chopped kismis and edible rose petals.

Notes/Tips

Total cooking process will be done in low medium heat.
