- Rinse and soak chhole overnight.
- Drain water and boil it in a pressure cooker with enough water for 6 whistles.( keep a tea potli in cooker if want dark colour)
- Heat oil in a pan.
- Add cinnamon, cloves, cardamom and bay leaves. When they began to crackle, add ginger n grated onion, sauté for 5 min.
- Now add all spices n Stir it properly and cook till this mixture leaves oil in its sides.
- Now add cooked chhole with sufficient water and bring it to boil for 10 to 15 minutes.
- When gravy thickens add kasuri methi and mix well.
- Take in a bowl, garnish with onion rings and serve hot with bhaturas.
