- Firstly Grind the cookies to a fine powder in a mixer Jar. Then add the melted butter in it and pulse it till it forms a wet mud-like consistency.
- Pour this mixture into a cheesecake tin and press it down with help of hand or a spoon.
- Keep this in fridge for about 30 minutes to 1 hour.
- In a bowl, combine cream cheese, sugar and condensed milk. Beat these three till it's creamy.
- Next add in mango puree, mango essence(optional), white chocolate and beat well for a minute or till combined.
- Now fold in the whipped cream gently with a spatula. And lastly add the gelatin into the mixture and give it a mix. Gelatin can be avoided totally but then the cheesecake must be kept for a much longer period in fridge!
- Pour this mixture onto the Biscuit mixture. Even it out with off-set spatula.
- Let it rest in fridge for about 8 to 10 hours or preferably a whole day!
- Top it with aamras puree or mint leaves and enjoy!
