Cream cheese is the main ingredient used in cheesecake without that ingredient we cannot make this recipe. But it is not easily available in all places. We can make cream cheese at home but it will be a long term process and will take at least one day and needs patience. Eggless Mango cheesecake without Creamcheese

  • Graham crackers 15 pieces
  • Melted Butter 2 tbsp
  • Powdered Sugar 2 tbsp
  • Almond meal 11/2 tbsp
  • Mango puree 1/2 cup
  • Hung curd 1/4 cup
  • Fresh cream 1/2 cup
  • Lemon juice 1 tsp
  • Sugar ,powdered 3 tbsp

Instructions

  • For Base: Pour curd in a muslin cloth or cheesecloth and hang them for about 5 hours to drain the excess water from the curd.
  • Chop mangoes and grind well in a mixer strain them and set aside.
  • In a bowl add crushed biscuits, melted butter, powdered sugar, and almond meal mix well tillStep 2 Chop mangoes and grind well in a mixer strain them and set aside.
  • Preheat the oven @ 180°c for 10 minutes. Then place them in the fridge and cool completely.
  • In a bowl add hung curd, softly beaten fresh cream, sugar, mango puree, and lemon juice whisk well and pour over 6" inch pie dish previously set in the fridge. Freeze them for 6 hours and decorate them with mango sauce* and scooped mangoes with a sprig of

Notes/Tips

I have used almond meal just to enhance its taste. You can avoid them. WHAT KIND OF BISCUIT WE CAN USE? We can use any biscuit-like graham crackers, milk biscuits but do not use salted ones. HOW TO MAKE MANGO PUREE? Chop Mangoes and grind well. Strain them and store them in an airtight container.
