Feta Cheese Greek Salad

Ingredients

  • English cucumber 2 nos (1 if big size)
  • Cherry tomatoes 10-12nos(if not available use 2 big roma tomatoes)
  • Pickled Green Pitted Olives 12-15 nos
  • Onion 1 large
  • Yellow/ Red capsicum 1 large oR 2 small
  • Lettuce 80-100 gms
  • Crumbled Feta Cheese 1 cup
  • FOR THE DRESSING :-
  • Extra Virgin olive oil 4 tablespoons
  • Red vine vinegar 3 tablespoons (OR 1 big lemon juice with zest)
  • Big garlic clove Minced
  • Ground oregano 1/2 teaspoon
  • Dijon Mustard 1/2 teaspoon(optional but Does make difference)
  • Salt to taste
  • Freshly grounded black pepper
  • A bit of honey optional if you want a sweeter dressing

Instructions

  • * Dice your cucumber & capsicum * Cut your cherry tomatoes in half if using Roma tomatoes dice them * For Pickled Olives you can half them but I like mine whole * Slice your Onions into rings * Tear Lettuce to your preferred size
  • * For the dressing add all the ingredients in a mason jar or a glass bottle cover and shake well to Emulsify OR you can even whisk them together in a bowl or a tumbler.
  • * In a large bowl toss everything together then gently fold in the Feta...Drizzle the dressing...give it a good mix...sprinkle some dried oregano and freshly ground black pepper & dig-in !

Notes/Tips

** Always wash your salad veggies & Greens in ice cold water for freshness & its crunchiness ! ** Although authentically there is no lettuce in a greek salad but I like some freshness & Crunchiness of it in my bowl of healthy yummy salad ?
