Green Moong Salad/ Lentil Salad

Ingredients

  • Green Moong ( soaked overnight & then boiled) 1 cup ( approx. 220-250 gm)
  • Cucumber (sliced) 1/2 cup
  • Capsicum/ Bell peppers 1/2 cup
  • Garden peas (boiled) 1/4 cup
  • Corn 1/4 cup
  • Black olives (optional) 1/4 cup
  • Chopped Tomato 1 medium size
  • Chopped Onion 1 medium/ 2 small
  • Garlic cloves ( thinly minced) 2 large
  • Freshly grated ginger 1 tsp
  • Roasted nuts chopped (refer notes) 1/4 cup
  • Cheese (optional) Notes 1/4 cup
  • Fresh herbs ( cilantro/ parsley/ basil/ mint Lightly chopped
  • Dry herbs (optional) 1 tbsp
  • Lime juice 3 tbsp
  • Olive oil 2 tbsp
  • Salt As per taste
  • Black pepper & chilli flakes 1/2 TSP each

Instructions

  • Take a small bowl & add in the oil. Mix all your seasonings ( pepper+ chilli flake+salt + herbs) along with lime juice & keep aside.
  • Take a mixing bowl. Add all the above veggies (Ingredients) except the cheese & nuts together.
  • Add the seasoned oil. Lastly add in the grated/ crumbled cheese (paneer)& the toasted nuts.
  • Give it a toss & mix everything together thoroughly.
  • Check your seasonings a last time. And then Put a cling wrap & keep in the refrigerator for 30 minutes.
  • I have made this salad using both Extra virgin & light olive oil. Extra virgin adds a flavor to the salad. Personally I liked the salad with light olive oil. If u dnt have olive oil use sunflower/ canola oil. The taste might get altered.
  • The vegetables you use for this salad can be altered as per your choice & availability. You can add seasonal veggies to your salads.
  • Adjust your chilli & pepper as per taste & heat u want in your salad. If u don't want your salad to be spicy, skip chilli. Fresh herbs are not available, then u can use dry mixed herbs . Fresh herbs combination I used ( cilantro/ Corriander & mint leaves)
  • Serve & Enjoy! This summer time recipe is really refreshing & perfect as a snack. Happy Cooking.....

Notes/Tips

Recipe Foot Notes: ? ✔️ Nuts like almonds/walnut/peanut can be used. Lightly toast them till they release an aroma. They are used to add crunch to your salads & is totally optional. U can skip if u want. ✔️I have used paneer ( cottage cheese) for this recipe. You can use small fresh mozzarella balls (Bocconcini) that are used for salad dressing. They also adds an amazing flavor to the dish. Or u can use feta cheese. Or tofu for vegan dish.
