Ingredients

  • Wheat Flour - 1 and ½ cups
  • Egg 1
  • Powdered Sugar 1 cup
  • Baking Powder 1 and ½ tsp
  • Baking Soda ½ tsp
  • Vanilla essence 1 tsp
  • Milk ¾ cup
  • Butter (unsalted) ¼ cup
  • Salt a pinch
  • Choco chips / Tutti Frutti/ Mixed berries

Instructions

  • 1. Sift all the dry ingredients twice i.e wheat flour, powdered sugar, baking powder, baking soda and salt.
  • 2. Whisk egg and to this add melted butter, vanilla essence and milk. Whisk all the wet ingredients well.
  • 3. Now using spatula mix both the dry ingredients to the wet ingredients using cut and fold method. Do this with light hands till we get lump free batter. Do not overmix as this will make our muffins very dense. The batter should be of pouring consistency.
  • 4. Now the base of the muffins is ready.
  • 5. Divide this base into different portions for making your favourite flavour. Add Choco chips/ tutti frutti/ mixed nuts/ mixed berries/ coco powder as per your choice into those portions.
  • 6. Line the muffin moulds with paper liners and pour batter upto ¾ level of the mould.
  • 7. Bake at 180 degrees for 15-20 minutes. However, this temperature may vary depending on your oven size.
  • 8. Take out of the oven and let it sit for about half an hour properly covered with a thin cloth to avoid drying of the crust. Relish your favourite flavour. You can top it with your favourite frosting.

Notes/Tips

All the ingredients should be at room temperature. When you add cocopowder for making chocolate muffins don't forget to add milk to make the batter slightly smooth.
