Healthy Green Lentil Curry

Ingredients

  • Green Lentils 2 Cups
  • Water 3 Cups
  • Can Tomato paste 6 oz
  • Can Coconut Milk 14 oz
  • Cumin 1 tsp
  • Curry Powder 1 tsp
  • Ground Coriander 1/2 tsp
  • Turmeric 1 tsp
  • Vegetable oil 1 tsp
  • Garlic 6 cloves
  • Large onion 1
  • Salt 1/4 tsp

Instructions

  • Heat oil in the pan over medium heat. Add garlic and onion to the pan and sauté for 5 minutes. Add cumin, curry powder, coriander, turmeric, and salt and sauté for 1 minute.
  • Transfer pan mixture to the slow cooker with remaining all ingredients. Stir well. Cover and cook on low for 6 hours. Serve warm with rice and enjoy.
