Ingredients

  • Dosa batter 3 cup
  • Chopped onion 1/3 cup
  • Chopped capsicum 1/3 cup
  • Chopped cabbage 1/3 cup
  • Chopped carrots 1/3 cup
  • Chopped coriander 1/3 cup
  • Chopped spring onions 1/3 cup
  • Chopped tomatoes 3/4 cup
  • Schezwan sauce/sriracha sauce 1/4 cup
  • Tomato ketchup 1/4 cup
  • Red chilli sauce 1/4 cup
  • Garam masala powder 1.5 teaspoons
  • Pav bhaji masala 1.5 teaspoons
  • Chaat masala 4.5 teaspoons
  • Butter as per taste
  • Salt as per taste
  • Oil as per taste
  • Grated cheese as per taste

Instructions

  • Heat & Oil a non-stick pan.
  • Take a ladle full of the dosa batter & Spread the batter to a neat round circle.
  • On a low flame cook the dosa till the top looks cooked.
  • Add 1 tbsp each of chopped cabbage, carrots, onions, capsicum, tomatoes and coriander leaves.
  • Add ½ to 1 tablespoon butter.
  • Add ½ tablespoon schezwan sauce, tomato ketchup and red chilli sauce.
  • Add ¼ teaspoon garam masala powder and ½ teaspoon chaat masala powder.
  • With a spatula or a potato masher, mix everything.
  • Spread the mixture on the center of the dosa.
  • Cover with a lid and cook for half a minute with low flame.
  • Spread the mixture on the entire dosa.
  • Cut the dosa with 4-5 parts with a pizza cutter on the Tawa itself.
  • Grate cheese and then roll each part.
  • Serve the jini dosa rolls with coconut chutney. You can sprinkle some grated cheese, chopped coriander leaves and chopped spring onions on top of the cheese jini dosa rolls while serving.
