Instructions

  • In a pressure cooker, add soaked rice, soaked dal and water. Cook for 4 whistles.
  • Mexican Khichdi - In a pan add oil, onion, carrot, capsicum, chillies, coriander and mix well. Add tomato puree and mix well.
  • Once veggies are cooked, add khichdi, mashed rajma, salt and mix well.
  • Pesto Khichdi - In a mixer grinder, add basil, nuts, garlic, chilli to make a smooth mixture.
  • In a kadai add oil, pesto mixture. Then add khichdi to it and mix well.
  • Chinese Khichdi - In a pan add oil, chopped ginger garlic, capsicum, carrot, cabbage and mix well.
  • Add soya sauce, chilli sauce, salt and saute well. Then add cornflour slurry to it.
  • Add khichdi to it and mix well.
  • Cone Papad - Fry papad in cone shape in oil Fill it with chopped salad.
  • Mango Pomogranate Raita - In a bowl, add curd, salt, chaat masala, mango, pomogranate and sugar. Mix it well.
  • Khichdi Platter combo with Pesto Khichdi, Mexican Khichdi and Chinese Khichdi is ready to eat and with side dishes Cone Papad, Mango Pomogranate Raita and Fried Noodles.

Notes/Tips

You can use any nut for pesto sauce. You can add any fruits available at home for fruit raita.
