- In a pressure cooker, add soaked rice, soaked dal and water. Cook for 4 whistles.
- Mexican Khichdi - In a pan add oil, onion, carrot, capsicum, chillies, coriander and mix well. Add tomato puree and mix well.
- Once veggies are cooked, add khichdi, mashed rajma, salt and mix well.
- Pesto Khichdi - In a mixer grinder, add basil, nuts, garlic, chilli to make a smooth mixture.
- In a kadai add oil, pesto mixture. Then add khichdi to it and mix well.
- Chinese Khichdi - In a pan add oil, chopped ginger garlic, capsicum, carrot, cabbage and mix well.
- Add soya sauce, chilli sauce, salt and saute well. Then add cornflour slurry to it.
- Add khichdi to it and mix well.
- Cone Papad - Fry papad in cone shape in oil Fill it with chopped salad.
- Mango Pomogranate Raita - In a bowl, add curd, salt, chaat masala, mango, pomogranate and sugar. Mix it well.
- Khichdi Platter combo with Pesto Khichdi, Mexican Khichdi and Chinese Khichdi is ready to eat and with side dishes Cone Papad, Mango Pomogranate Raita and Fried Noodles.
