  • Shelled Edamame 200g
  • Quinoa 3 cups
  • Cherry Tomatoes 1 Cup
  • Spring onions 1/4 cup
  • Carrot 1/3 cup
  • Black beans 1 Cup
  • Basil 1/2 cup
  • Black pepper 1/4 tsp
  • Kosher salt 1/2 tsp
  • Lemon Vinaigrette 1/3 cup

Instructions

  • Cook the edamame in the microwave according to the package directions. Let it cool for 10 minutes. Combine the quinoa, tomato, spring onions, carrot, black beans, basil, salt, pepper and edamame in a large bowl. Add the dressing and stir gently to combine.
