Millet Cupcake with Pumpkin Frosting

Ingredients

  • Foxtail millet 1/2 cup
  • Wheat flour 2 tsp
  • Baking powder 1/2 tsp
  • Baking soda 1/4 tsp
  • Egg 2
  • Palm jaggery / Powdered jaggery 1/2 cp
  • Vanilla essence 1/2 tsp
  • Pumpkin 1/2 cup
  • Butter 100 gms
  • Powdered sugar 1/2 cup
  • Black jamun fruit 1/2 cup

Instructions

  • First mix dry ingredients together. Foxtail millet flour + Wheat flour + Baking powder + Baking soda + cocoa powder
  • Next separate egg and yolk .
  • Beat egg white until stiff peak
  • Now add Powdered jaggery , yolk and vanilla essence , oil together. Beat well until it mix together.
  • Now add beaten egg white and mix slowly
  • Transfer this to muffin mould and bake at 180 deg C for 20 mins in a preheated oven.
  • To make pumpkin frosting : First remove pumpkin skin and cut into small pieces. Steam cook for 15 mins
  • After 15 mins grind to fine paste
  • Now beat unsalted butter until its colour changes to white. Next add powdered sugar Nd beat until stiff peak. Then add pumpkin paste (3 tsp ) and beat again. Now pumpkin frosting is ready
  • Transfer this to a piping bag and make your own design on top of the muffin.
  • On top i used jamun fruit syrup and glaze . For jamun fruit syrup boil sugar , jamun fruit and water together for 15 mins . And filter the thick syrup.
  • For glaze : maida - 1/2 tsp Oil-1 tsp Jamun fruit Water- 4tsp Mux everything together and pour on hot tawa. Cook in low flame and you wil get crispy bubble layer.
  • Garnish with bubble glaze and jamun syrup.
