- Soak the chana dal overnight and grind to a coarse paste.
- Make small balls from the daal paste and fry them in ghee on low medium flame until golden brown.
- Let all the pakodas cool down completely and break them into small pieces.
- Grind them into a coarse powder in a mixer. Do not make a fine powder but it should resemble like fine boondi.
- Fry the melon seeds and cashews in ghee and keep aside.
- In a heavy bottom pan, add the sugar and water and food color if using. Boil till sugar melts and make 1 string consistency syrup.
- Add the pakodas powder along with fried nuts and 4tbsp ghee and mix well. Cook for around 2mins and turn off the flame.
- Make the laddus once the mixture is cooled enough to handle from hands. Do not cool completely else you will not be able to bind the laddus.
- Garnish with fried nuts of your choice and enjoy.
