- 1.In a large mixing bowl, add chicken mince, salt, powder spices and an egg and mix thoroughly. Then add the cornflour and mix well.
- 2.Now divide the mince mixture into 6 equal portions and shape them in the form of a patty.
- 3.Then wrap each boiled egg with each chicken patty. Please ensure that the mince mixture is equally coated around the egg.
- 4.Place the eggs on a baking tray lined with a parchment paper. Bake in a preheated oven at 180°C for 25 mins. Please baste once after 10 mins. Remove immediately and set aside to cool.
- 5.Boil together onion, tomatoes, green chillies and cashews until cooked.
- 6.Strain, cool and blend to a fine paste. Reserve the stock.
- 7.In a pan, heat oil and add ginger garlic paste. Cook till the raw smell goes off.
- 8. Now add the blended puree and allow it to simmer.
- 9.Add the spices, sugar, salt and stir in the puree. Cook for 2 mins.
- 10. Now add kasoori methi. Further simmer for 2 mins and finish with cream.
- 11. Finally add in the koftas and simmer the curry till the flavor infuses in the koftas. Serve hot.
