  • soft boiled eggs 6
  • chicken mince 500gm
  • salt 1 tsp
  • turmeric 1/4 tsp
  • garam masala 1/2 tsp
  • red chilli powder 2.5 tsp
  • coriander powder 1.5 tsp
  • roasted cumin powder 1 tsp
  • cornflour 2 tbsp
  • egg 1
  • medium onion 1
  • small tomatoes 4
  • green chillies 3
  • ginger – garlic paste 1 tbsp
  • cashews 1 tbsp
  • tomato puree 100ml
  • kasoori methi 1/2 tsp
  • sugar 1 tsp
  • cream 1 tbsp
  • oil for Basting & cooking 2 tbsp

Instructions

  • 1.In a large mixing bowl, add chicken mince, salt, powder spices and an egg and mix thoroughly. Then add the cornflour and mix well.
  • 2.Now divide the mince mixture into 6 equal portions and shape them in the form of a patty.
  • 3.Then wrap each boiled egg with each chicken patty. Please ensure that the mince mixture is equally coated around the egg.
  • 4.Place the eggs on a baking tray lined with a parchment paper. Bake in a preheated oven at 180°C for 25 mins. Please baste once after 10 mins. Remove immediately and set aside to cool.
  • 5.Boil together onion, tomatoes, green chillies and cashews until cooked.
  • 6.Strain, cool and blend to a fine paste. Reserve the stock.
  • 7.In a pan, heat oil and add ginger garlic paste. Cook till the raw smell goes off.
  • 8. Now add the blended puree and allow it to simmer.
  • 9.Add the spices, sugar, salt and stir in the puree. Cook for 2 mins.
  • 10. Now add kasoori methi. Further simmer for 2 mins and finish with cream.
  • 11. Finally add in the koftas and simmer the curry till the flavor infuses in the koftas. Serve hot.
