Ingredients

  • Olive oil 4 tbsp
  • Zucchini 1
  • Yellow squash 1
  • Onion 1
  • Carrot 1
  • Water 4 tbsp
  • Mushrooms 1 Cup
  • Red pepper 1/2
  • Broccoli florets 1 cup
  • Garlic powder 2 tsp
  • Black pepper 2 tsp
  • Salt 2 tsp
  • Onion powder 1 tsp
  • Wheat rigatoni pasta 4 cups

Instructions

  • Prepare a skillet with 1 tbsp of olive oil over medium heat and sauté the zucchini, squash, onion and carrots for about 7 minutes, adding water when needed to prevent sticking and promote steaming.
  • Add mushrooms, red pepper and broccoli and continue to sauté for another 7-9 minutes or until all vegetables are slightly softened.
  • Pour the prepared pasta into a mixing bowl and add veggies and seasonings. Drizzle remaining 2-3 tbsp of olive oil over the pasta and toss to coat.
