- Prepare a skillet with 1 tbsp of olive oil over medium heat and sauté the zucchini, squash, onion and carrots for about 7 minutes, adding water when needed to prevent sticking and promote steaming.
- Add mushrooms, red pepper and broccoli and continue to sauté for another 7-9 minutes or until all vegetables are slightly softened.
- Pour the prepared pasta into a mixing bowl and add veggies and seasonings. Drizzle remaining 2-3 tbsp of olive oil over the pasta and toss to coat.
