  • Butter 2 tbsp
  • Shallot, diced 1
  • Garlic, minced 4 no.s
  • Jalapeno, diced 2 no.s
  • Tomato puree 1 cup
  • Fresh cream 2 tbsp
  • Chipotle chilli paste 1 tbsp
  • Cayenne pepper powder 1 tsp
  • Cornstarch 1 tbsp
  • Cream cheese 4 tbsp
  • Yellow mustard powder 1 tsp
  • Nutmeg powder 1/4 tsp
  • Black pepper, crushed 1/2 tsp
  • Smocked cheddar cheese, shredded 1/2 cup
  • Red chilli flakes 1 tsp
  • Salt to taste
  • Boiled rice 3 cups
  • Boiled kidney beans 1/2 cup
  • Bell Pepper, diced 1 cup
  • Processed cheese, shredded 1/2 cup
  • Olive oil 2 tbsp
  • Cayenne pepper powder 1 tsp
  • Fresh oregano leaves 15-20 no.s

Instructions

  • Prepare Queso into butter with all ingredients & cook well. remove in a bowl. Keep aside.
  • Slightly toss all the vegetables, beans & rice into olive oil & spices & mix well on high heated pan.
  • Now serve Queso Rice bowls prepared with rice and Queso layers with grated cheese. repeat the layers 2 times & top with Queso. Bake on 140*C for 15 minutes, garnish with Oregano leaves. Serve hot with Nachos & Salsa.
