- In the flour, add the olive oil and mix until it reaches a crumbly texture. Add water and knead a fine, soft dough. Set aside
- In a pan, heat some olive oil and add crushed garlic. Add finely chopped spinach to this and stir. Add salt, mixed herbs and pepper.
- Take off the heat and add the ricotta cheese. Gently mix until combined.
- Roll the dough into thin sheets and cut into squares.
- Spoon some cheese-spinach mixture into the center and seal with another square of dough. Pinch the ravioli from all sides.
- Repeat with the rest of the dough and stuffing.
- In a large pot, boil some water and add salt and oil.
- Drop the prepared ravioli into it and cook for 6-8 minutes until al dente.
- Drain and dunk into a spicy hot tomato sauce or enjoy as it with a drizzle of olive oil.
