Ingredients

  • Arborio rice or small grained rice 1 cup
  • Onion, chopped 1 units
  • Garlic cloves, chopped 2 units
  • Vegetable stock 3 cup
  • Chopped mixed vegetables 1/2 cup
  • Mushrooms, sliced 1/2 cup
  • Grated cheese 1/2 cup
  • Cream 1/2 cup
  • Salt as per taste
  • Pepper as per taste

Instructions

  • Saute onions in the oil till tender and add the rice to it.
  • Saute the rice till translucent.
  • Slowly, add vegetable stock, 1/2 cup at a time.
  • Cover and let the rice cook.
  • Add the vegetables and mushrooms and simmer on low heat until cooked.
  • Add cream and cheese and mix well. Serve. Enjoy your meal!
