  • Red Pepper 1
  • Yellow Pepper 1
  • Red Onions 2
  • Zucchini 1
  • Garlic 2 cloves
  • Olive oil 2 tbsp
  • Cherry tomatoes 1 Cup
  • Mixed herbs 1 tsp
  • Sea Salt

Instructions

  • Preheat the oven to 190*C. Slice the peppers and onions into strips and the zucchini into discs. Cut the garlic cloves in half.
  • Add everything in a bowl and mix well. Make sure all the vegetables are covered in oil. Spread the vegetables on a roasting tray and scatter the mixed herbs on the vegetables. Season with salt and pepper.
  • Roast in the oven for 45 minutes, checking every 15 minutes that the vegetables are not burning and are cooking evenly.
