- Preheat the oven to 190*C. Slice the peppers and onions into strips and the zucchini into discs. Cut the garlic cloves in half.
- Add everything in a bowl and mix well. Make sure all the vegetables are covered in oil. Spread the vegetables on a roasting tray and scatter the mixed herbs on the vegetables. Season with salt and pepper.
- Roast in the oven for 45 minutes, checking every 15 minutes that the vegetables are not burning and are cooking evenly.
