Sandhesh

Sandesh is a Bengali dessert, created with milk and sugar. Sandesh is usually made from chenna or panner which is made by curdling the milk and separating the whey from it instead of directly using milk. It is popular throughout the Country.

Notes/Tips

Never put lemon juice or vinegar in boiling milk otherwise it will make the chenna( Paneer) hard. Do not throw the water which was drained out from the chenna. You can keep it aside for a day and then in fridge. Next time you can use the same water to prepare the Chenna. Wash the chenna with cold water to get rid of the smell of vinegar. Use powdered sugar instead of crystallized one as powdered sugar mixes up more quickly and firmly.
