Sautéed Spinach with Pine Nuts and Raisins

  • Olive oil 1 tbsp
  • Garlic 1 clove
  • Spinach 1 bunch
  • Golden raisins 3 tbsp
  • Kosher salt 1/4 tsp
  • Black pepper 1/8 tsp
  • Pine nuts 3 tbsp

Instructions

  • Heat a large saucepan over medium-high heat. Add the oil to the pan and swirl to coat. Add the garlic and cook for 30 seconds. Add the spinach, raisins, salt and pepper.
  • Cook, tossing occasionally with tongs, for 3 minutes until the spinach wilts. Sprinkle with the pine nuts.
