- Wash potatoes, brush with mix of salt, pepper and 1 tbsp of olive oil. Wrap each potato in foil and grill in oven for 20 min.
- Take out from oven and open the foil. Scoop out potato from one side to make a shallow socket. Keep it aside.
- Heat 1 tbsp of olive oil in a pan, add garlic n bell peppers. Sauté for 2 min. Turn of the heat.
- Assemble potatoes and stuffing layers of sour cream, pesto sauce, sautéed bell peppers in scooped space.
- Top with parsley and basil leaves. Drizzle lil olive oil and serve with mocktails or soup.
