  • Brinjal/Eggplant 200 gms.
  • Gram flour 100 Gms.
  • Minced Onion 1 Nos.
  • Minced Ginger 50 Gms.
  • Minced Garlic 50 Gms.
  • Cumin Powder 1 Tsp.
  • Coriander Powder 1 Tsp.
  • Red chilli powder As per taste.
  • Boiled Potatoes 3 Medium-Sized
  • Cornflower 30 Gms.
  • Turmeric 2 Tsps.
  • Salt As per Taste.

Instructions

  • At First, Take A Medium-Sized Brinjal/Eggplant And Cut It Into The Shape Of 5 Discs.
  • Now Marinate Them With Salt And Turmeric And Set Aside. Next, Prepare The Stuffing With Boiled Potatoes, Ginger, Garlic, Coriander, Onion And Salt To Taste.
  • Now it's time for the stuffing. Cut through the middle of the surface of each disk just before the other end (Do not cut it fully) and stuff-in the Potato-onion mixture inside the cut.
  • Next, take a hit wok or Kadai and pour any cooking oil enough for deep-frying. And fry the loaded discs one-by-one until they they turn brown. Thereafter, kill the heat and your stuffed Brinjal/Eggplant fritters are ready to be served. Bon appetite!

Notes/Tips

While cutting through the surface of each disc, extreme care needs to be taken so that they are not torn in two. Also, it is noteworthy that the amount of stuffing to be put inside each cut sould be such that the stuffing does not overflow while closing the mouth of each disc.
