- Cut the watermelon cubes and keep in the refrigerator to chill.
- Heat a pan on low heat and roast the flax seeds until they start popping. Roasting enhances both the flavor and texture of the seeds. Take them out in a plate and let cool.
- For the dressing mix lime juice, honey, salt and pepper together well. Keep aside.
- In a large bowl, put the chilled Watermelon cubes. Add the pumpkin seeds, flax seeds.
- Top it with some crumbled cheese and sliced black olives.
- Now roughly tear the mint leaves with hands and sprinkle. Tearing mint leaves releases its fragrance.
- Now drizzle the dressing on top. Mix everything together gently with wooden spoons until all the Watermelon cubes are nicely covered with seeds and dressing.
