Summer Melon and seeds salad

Ingredients

  • Watermelon cut into small cubes 1 cup
  • Black olives sliced 1 tbsp
  • Pumpkin seeds 1 tbsp
  • Roasted Flax seeds 1 tbsp
  • Cheese (roughly crumbled ) 50 gm
  • Fresh mint 8-10
  • Fresh lime juice 1 tbsp
  • Honey 1 tbsp
  • Black pepper 1 tsp
  • Salt 1 tsp

Instructions

  • Cut the watermelon cubes and keep in the refrigerator to chill.
  • Heat a pan on low heat and roast the flax seeds until they start popping. Roasting enhances both the flavor and texture of the seeds. Take them out in a plate and let cool.
  • For the dressing mix lime juice, honey, salt and pepper together well. Keep aside.
  • In a large bowl, put the chilled Watermelon cubes. Add the pumpkin seeds, flax seeds.
  • Top it with some crumbled cheese and sliced black olives.
  • Now roughly tear the mint leaves with hands and sprinkle. Tearing mint leaves releases its fragrance.
  • Now drizzle the dressing on top. Mix everything together gently with wooden spoons until all the Watermelon cubes are nicely covered with seeds and dressing.
  • Serve immediately! The refreshing Summer Seeds Salad is ready! It's such a pleasing sight!! And a delicious experience!!
