  • Market based Dosa batter
  • Chopped Onions, coriander leaves, 1 egg (optional)
  • Salt, 3 tbsp curd, ginger and garlic paste
  • Tandoori masala 1 tbsp
  • Cucumber, onions For salad

Instructions

  • Add the chopped onions, green chillies, 2 tbsp curd or 1 egg, coriander leaves , salt with 2 cups of batter and mix well keep it aside for 5 min.
  • Grease the appam maker and add a spoonful of batter in the appam cavities and allow them to cook from both sides till it becomes brown. Make all the appams.
  • Meanwhile take tandoori masala in a bowl mix it with curd and garlic & ginger paste add little salt.
  • Now in a pan add the butter and 1 tsp of white oil add the tandoori and curd mix masala and mend it together with garlic and ginger, immediately add all the appams, little salt and mix them with the masala well.
  • Once it is well coated with the masala, burn a coal piece on gas stove properly and keep it in a small bowl or on an aluminium foil add some ghee or oil on the top of the coal. put it immediately in the pan where you cooked the appams with the masalas.
  • Cover it and keep it for 3-4 mins , let the smokey smell get arrested to the appams.
  • Uncover and serve hot the Smokey Tandoori Appams with your favourite dip or you can go for a simple cucumber and onion mayonnaise salad.
