- ππππππππππ πππππππ : 1. Take bitter gourds( Karela), peel, Cut them into halves, apply some salt over them and keep it aside for 15 to 20 minutes. Wash them after 20 mins.
- 2. Peel the boiled Arbi, chop it into two halves, peel & slice potatoes, carrots, capsicum. Take brinjals, chop into two halves and mark a cross over them. Take ladyfingers, chop their tops and tails. Mark cutting areas between them.
- chop cauliflower as per size you prefer. Deep fry all the veggies individually on high flame until they are crispy while occasionally stirring them. Keep aside.
- 4. Mix a teaspoon of Chaat Masala, a teaspoon of red chilli powder and a Β½ teaspoon salt. Sprinkle this masala all over the fried veggies.
- ππππππ πππππππππππ : Take tomatoes, green chillies, ginger, garlic, onions, green coriander and grind them to a paste.
- 6. Heat 2-3 tbsp oil in a pan, add Β½ pinch of asafoetida , then Add the prepared paste to it. Cook for 5 mins on medium flame. Β Add Β½ teaspoon of turmeric powder, a 1.5 teaspoons of coriander powder, a teaspoon of fennel seeds powder(sauf).
- Further add a teaspoon of red chilli powder, a teaspoon of cumin powder to it. Stir and cook the Masala mixture until oil separates from it. Add a teaspoon of salt, a tablespoon of fenugreek leaves( kasuri methi) after crushing to it. Β
- add a Β½ teaspoon of Garam Masala and some finely chopped green coriander to it. Stir and mix well.
- 9. ππππππππππ ππππ πππππ: Preheat a tawa, fry veggies individually, put some butter, add some Masala mixture and sprinkle some water on it. Stir fry for a while and later on, serve it. You can cook and serve all the veggies likewise.
