Ingredients

  • SPICES
  • Dry fenugreek (kasuri methi)- 1 tbsp
  • Chaat Masala - 2 tsp
  • Red chilli powder - 2 tsp
  • Coriander powder - 1.5 tsp
  • Asafoetida - Β½ pinch
  • Cumin powder - 1 tsp
  • Fennel powder (sauf) - 1 tsp
  • Turmeric powder - Β½ tsp
  • Garam Masala - Β½ tsp
  • Maggie masala magic(optional)
  • Salt - 2 tsp
  • Oil - for frying
  • VEGETABLES
  • Potatoes - 3 (slices)
  • Ladyfinger - 15
  • Brinjal - 4-5
  • Bitter gourd (karela)- 4-5
  • Cauliflower, tinda, arbi , capsicum, carrots
  • MASALA PREPARATION
  • Tomatoes - 4-5
  • Onions - 2
  • Green chilli - 2
  • Ginger 1 inch , garlic 6-7 cloves
  • Green coriander (finely chopped) - 2 to 3 tbsp
  • Butter - 2 to 3 tbsp

Instructions

  • 𝐕𝐄𝐆𝐄𝐓𝐀𝐁𝐋𝐄𝐒 𝐏𝐑𝐄𝐏𝐀𝐑𝐄 : 1. Take bitter gourds( Karela), peel, Cut them into halves, apply some salt over them and keep it aside for 15 to 20 minutes. Wash them after 20 mins.
  • 2. Peel the boiled Arbi, chop it into two halves, peel & slice potatoes, carrots, capsicum. Take brinjals, chop into two halves and mark a cross over them. Take ladyfingers, chop their tops and tails. Mark cutting areas between them.
  • chop cauliflower as per size you prefer. Deep fry all the veggies individually on high flame until they are crispy while occasionally stirring them. Keep aside.
  • 4. Mix a teaspoon of Chaat Masala, a teaspoon of red chilli powder and a Β½ teaspoon salt. Sprinkle this masala all over the fried veggies.
  • πŒπ€π’π€π‹π€ ππ‘π„ππ€π‘π€π“πˆπŽπ : Take tomatoes, green chillies, ginger, garlic, onions, green coriander and grind them to a paste.
  • 6. Heat 2-3 tbsp oil in a pan, add Β½ pinch of asafoetida , then Add the prepared paste to it. Cook for 5 mins on medium flame. Β Add Β½ teaspoon of turmeric powder, a 1.5 teaspoons of coriander powder, a teaspoon of fennel seeds powder(sauf).
  • Further add a teaspoon of red chilli powder, a teaspoon of cumin powder to it. Stir and cook the Masala mixture until oil separates from it. Add a teaspoon of salt, a tablespoon of fenugreek leaves( kasuri methi) after crushing to it. Β 
  • add a Β½ teaspoon of Garam Masala and some finely chopped green coriander to it. Stir and mix well.
  • 9. π€π’π’π„πŒππ‹πˆππ† 𝐓𝐀𝐖𝐀 π’π€ππ™πˆ: Preheat a tawa, fry veggies individually, put some butter, add some Masala mixture and sprinkle some water on it. Stir fry for a while and later on, serve it. You can cook and serve all the veggies likewise.

Notes/Tips

Use the veggies as per the availability and choice. If you are adding Tawa Masala then do not add Chaat Masala. You can cook all the veggies altogether rather than individually frying them, depending on the size of tawa.
