Ingredients

  • Arugula 50 gms
  • Red bell pepper 1/2
  • Yellow bell Pepper 1/2
  • Carrot 1
  • Thai Basil 6-7 leaves
  • Peanut 8-10
  • Peanut butter 3 tbsps
  • Soy sauce 1/2 tsp
  • Thai chillies 5-6
  • Olive oil
  • Salt
  • White pepper
  • Red cabbage 10 grams
  • Ginger /galangal 1 inch
  • Garlic 2 cloves

Instructions

  • throughly wash all the veggies.
  • Dress The Arugula With Some Salt And Olive Oil.
  • Finely Julienne Peppers, Red Cabbage, Carrots. Set Aside .
  • In another bowl, whisk some smashed galangal/ginger, minced garlic, peanut butter, soy sauce, thai chillies, pepper & olive oil together to create a dressing. Add water to make lighter consistency
  • Dress the salad
  • Serve with some crushed peanuts and torn basil leaves

Notes/Tips

Salt and oil the Arugula is necessary to avoid the itch it may cause in the throat! Check the salt as lot of components have already been salted & if you use salted peanut butter also you gotta keep keeping as you go.
