  • Rice 2cup
  • Urad dal 1 cup
  • Jaggery 1&1/2 cup
  • Ginger crushed 1/2 inch
  • Green Cardamom crushed 6-7
  • Black pepper crushed 5-6
  • Chooped cashew 4tblsp
  • Raisins 2tblsp
  • Chopped coconut 4tblsp
  • Greated coconut 1cup
  • Bay leaves 2-3
  • Cottage cheese 1cup
  • Baking pwd 1/2 tsp
  • Salt 1/2 tsp
  • Ghee 4-5tsp
  • Banana Leaves 2

Instructions

  • Soak rice & urad dal overnight. In the morning, grind to a not so smooth paste, using very little water. After that take the batter into a mixing bowl, add 1/2 tsp salt to it & allow to ferment for 2hrs.Then add ginger, jaggery, black pepper pwd,
  • Cardamom pwd, cottage cheese, raisins, cashew, grated coconut,chopped coconut,bay leaves, drizzled 2 tsp of ghee.Mix the batter nicely so everything is evenly distributed.Let the batter rest for 10 mins.Roast the banana leaf in heat otherwise it may break.
  • Grease the vessels or baking try with ghee and set the banana leaves in it. Then pour the batter into the remekins till about 2/3 rd full & garsnish with some chopped coconut, cashews, raisins, ghee, cherries in it.
  • Then place the baking tin into pressure cooker, removed whistle, gasket & cover a lid & bake in this traditional way for 30 mins. You may also bake it the microwave also at 160°c for 30 mins. After 30 mins check the middle of the pitha, when the skewers
  • Come out clean, it's perfectly baked, when it's not baked perfectly baked another 10-15 mins.After that let the bake pitha cool down completely for at least 1 hour. Then de- mould it. Cut into small piece's & enjoy the sweet poda pitha..

Notes/Tips

Don't over bake the pitha until it's burnt.
