  • White sugar 1/2 cup
  • Ground cinnamon (optional) 1/2 teaspoons
  • Brown sugar 1/4 cup
  • Baking powder 1 teaspoons
  • Baking soda 1/2 teaspoons
  • Ground nutmeg (optional) 1/2 teaspoons
  • Salt 1/2 teaspoons
  • All purpose flour 1 1/2 cup
  • Ripe bananas 1 cup
  • Canola oil 1/2 cup
  • Coconut milk 1/2 cup

Instructions

  • Pre-heat your oven to 180 degree Celsius and grease your muffin tray or line them with baking sheets.
  • Take a bowl and mix white sugar, ground cinnamon, brown sugar, baking powder, baking soda, ground nutmeg, all purpose flour and salt.
  • In a separate bowl, add ripe bananas, canola oil (or any neutral oil) & coconut milk.
  • Combine both the mixtures and mix till thoroughly combined, and fill the greased muffin cups with the batter.
  • Bake for 30-35 minutes and then insert a toothpick to check if the muffins have baked well.
