- Pre-heat your oven to 180 degree Celsius and grease your muffin tray or line them with baking sheets.
- Take a bowl and mix white sugar, ground cinnamon, brown sugar, baking powder, baking soda, ground nutmeg, all purpose flour and salt.
- In a separate bowl, add ripe bananas, canola oil (or any neutral oil) & coconut milk.
- Combine both the mixtures and mix till thoroughly combined, and fill the greased muffin cups with the batter.
- Bake for 30-35 minutes and then insert a toothpick to check if the muffins have baked well.
