Vegan Turmeric Bites

Ingredients

  • oat flour 1 cup
  • Puffed amaranth(Rajgira) 1/2 cup
  • dessicated coconut 1/2 cup
  • jaggery syrup 1/4 cup
  • Cashew butter 1/2 cup
  • Vanilla essence 1tsp
  • oil 1.5tsp
  • Turmeric 1.5tsp

Instructions

  • 1. Heat a pan and lightly toast the coconut until it turns golden brown. Place it in a bowl.
  • 2. In the same pan gently toast the Oat flour followed by the puffed amaranth.
  • 3. Combine all the dry ingredients, and Mix well.
  • 5. Place the jaggery in a heavy bottom vessel and add enough water to cover it completely. Simmer on a low flame for 5 minutes until the jaggery melts completely and forms a syrup.
  • add cashew butter (or any other nut butter), turmeric,jaggery syrup, vanilla essence and oil to the dry ingredients. Mix thoroughly until it forms a dough.
  • Rest this mixture in the Refrigerator for 30 minutes. Roll into bite-sized balls or into any shape as desired.
  • These vegan turmeric bites can be stuffed or covered with puffed amaranth, granola, toasted sesame seed, chopped nuts or melted chocolate. serve

Notes/Tips

1)Refrigerate the mixture for at least 30 minutes so that it is easier to shape. 2)jaggery syrup can be replaced by honey or maple syrup or any other sweetener as desired. 3)Adjust the sweetness and flavours to suit your family's palate.
