- Heat a non stick pan with olive oil in it. Add the chopped fine garlic and shallots and fry till golden.
- Add the grated zucchini and finely chopped bell peppers with the flame on high
- Fry it till it releases the water and most of The water is Evaporated. Add some salt and pepper.
- Finally add a tablespoon of All purpose flour (maida) and fry it for another 3 minutes.
- Bring the mixture down in a bowl and add the grated cheese, Bread crumbs and oregano in it. Mix it well.
- Trim the sides of the bread and toast both the sides lightly on a Pan.
- Add the zucchini cheese mix on top of it and grill it with butter face down. Keep moving the toast while grilling to stop it from sticking to the pan.
