Zucchini and Cheese Toast

Ingredients

  • Chopped Garlic 1 tablespoon
  • Chopped Shallots 1 Tablespoon
  • Grated Zucchini 1 large
  • Grated processed Cheese 2 cubes
  • Salt and pepper as per taste
  • Chopped green chillies as per taste
  • Olive oil 1 tablespoon
  • Butter 2 tablespoon
  • Chopped bell peppers 1 small
  • Brown bread 4 slices
  • Bread crumbs 1 tablespoon
  • All purpose flour 1 tablespoon
  • Oregano 1 tablespoon

Instructions

  • Heat a non stick pan with olive oil in it. Add the chopped fine garlic and shallots and fry till golden.
  • Add the grated zucchini and finely chopped bell peppers with the flame on high
  • Fry it till it releases the water and most of The water is Evaporated. Add some salt and pepper.
  • Finally add a tablespoon of All purpose flour (maida) and fry it for another 3 minutes.
  • Bring the mixture down in a bowl and add the grated cheese, Bread crumbs and oregano in it. Mix it well.
  • Trim the sides of the bread and toast both the sides lightly on a Pan.
  • Add the zucchini cheese mix on top of it and grill it with butter face down. Keep moving the toast while grilling to stop it from sticking to the pan.
  • Garnish it with some bell pepper curls and iceberg lettuce. Your healthy delicious vitamin packed breakfast of champions is served.

Notes/Tips

Grate the zucchini as fine as possible to get the desired texture. Fry the maida well after adding because you don't want raw flour in your mix.
